  1. The chief food of people long ago was potatoes and porridge. The bread was mostly made from the potatoes. Potatoes cake was made from boiled potatoes which were mixed up fine and flour put through them. It was wet with milk and then baked. For boxty the raw potatoes were peeled and grated on a grater. It was them mixed with salt and soda and baked on a griddle in front of the fire.
The potatoes were oiled for the noonday meal. There were thrown into a ciscan to be teemed. The ciscan was left in the centre of the floor and all the people sat round it and eat them with cups of buttermilk.
Porridge was always eat by the people long ago. They made it from Indian Meal and made it on water. It was boiled in a large saucepan and there was enough put down at one time as would do to or three. Butter was sometimes put in the porridge. A potstick was always used in stirring the porridge. It was made from the ash as it is the only food that wont taste.
