- My father has explained to me the way boxty bread was made when he was a boy.A ‘grater’ is required which can be made from a piece of ordinary tin by punching holes in it. This provides a rough surface on which to “pulp” the potato.Three or four stone of potatoes are cleanly washed for the purpose.At night the ‘bean a wife’ takes a large tub and places it in the middle of the floor and sits down to her work. She rubs the potato on the ‘grater’ and the fine pulp which falls through the holes is for use.The liquid is then squeezed out of the pulp with a piece of cloth. It is then emptied on a table and a little flour is added and mixed.The cake is rolled out very flat and hardened on a griddle.(leanann ar an chéad leathanach eile)
