- Long ago the people hadn't any flour-bread to eat as they have to-day. Flour was very scarce in Ireland and often they travelled twelve miles for a single stone of it for the Christmas cakes. They made oatmeal-bread, potato-cake and boxty and were much stronger and healthier than the people nowadays. In order to make oatmeal bread a quantity of oatmeal is put into a clean basin. Then a pinch of salt and a little soda are added to it and it is wet with water. It is thoroughly kneaded all the water is soaked into it. Then it is emptied into a clean board and flattened out in the shape of a cake. It is then cut into four parts.(leanann ar an chéad leathanach eile)
