    pure white. These cooling tubs were made of wood.
    The milk was set in pans and small pecks, and when it was skimmed the cream was thrown into a big wooden tub, which was called the cream-tub.
    The cream-barrel was put on two stands, and it had on it, two handles. Two people had to be present for the making of the butter. The butter was washed and salted. It was then packed in the firkins. Next it was taken to the market and sold. The people of this locality took their butter to Cork, and the road which passes our school was the main road to Cork at that time. The people of this locality often (?) in taking the butter to the market..
    Sometimes one neighbour would take all the butter of the locality to the market for one day. Then another one might take it all the next day. The butter buyers sometimes came to Newcastle-West, and then the people carried their butter, and
