  1. To make boxty you must wash and peel raw potatoes. Then grate them on the rough side of a grater. Strain all the water out of them and put salt and a little milk on them, and also some flour. Mix them in a batter and pour a thin batter on the pan. The pan should be greased with butter first. When the cake is brown on one side turn it and brown the other side. Then cut it in quarters and put butter on both sides. It is served hot.
