   An old Irish dairy was a thatched one with the window and door facing North. The dairy requisites consisted of a plunge churn and dash, wooden milk coolers, a large tub to hold the cream, a tin strainer and a square frame made of light timber over which a piece of muslin was spread to strain the milk also a srubbing brush to clean the churn and cooler.
   When the cows were milked the milk was first passed through the tin strainer and afterwards through the muslin to be sure that it was cleansed of any hairs or other matter that would injure the butter.
   The milk coolers were scrubbed with boiling water and salt and then rinsed with cold spring water and placed out in the sun to dry. The housewife or girls of the house did the milking and were very particular in the
