- We have a churn at home. It is about three feet tall. it is wide in the bottom and up near the top it gets narrow, and then it gets wide again at the top. Some people have a big churn, and some have small churns. A big churn is called a two-cow-churn and a small churn is called a one-cow-churn. Before churning the cream is gathered in a crock. After a few days the cream gets very thick and it is put into the churn. Then the dash is put into the churn and the lid is put on the churn. The dash is moved up and down for a while. Then some other person takes the dash. Sometimes if the butter is not coming on quickly they put hot water in the churn. After about a quarter of an hour the milk gets cracked. That is the small butter begins to come on it. Then the dash is moved up and down slowly.(continues on next page)
