- Poteen MakingLong ago poteen was made in nearly every house in Ballygeeher. It was made from oats. First the oats was steeped in water for twenty-four hours. Then it was put in a pile to sweat. Then it was brought to the mill and ground into malt. Then it was brought home and steeped in hot water. Then the water is put into a still and barm was put into it. The still was a big vessel like a can. Two little walls were built out from the fire and between them was put a big fire and on the fire was put the still. Then the head was put on the still and from the head there was a big pipe going over to a barrel which was filled with was water and in which the warm or bent piece of copper pipe was(continues on next page)
