My granny Mrs Jane Clabby, of Ruskey aged 82 years told me how bread used to be made when she was young.She said, the flour was made of wheat with a quirn John Clabby Cllonafill, Rooskey, told me he had two quirns.She said this is the way she saw her mother making potatoes-bread. She boiled some big potatoes and when they were boiled, she peeled them and put them in a basin. Then she put some flour and a pinch of salt and mixed it up with a porringer. She made it into a cake, and cut it into four parts called farrells.The pan was got ready and the cake was put on it. After some time she took it up and each one got a farrell.This is the way she makes boiled boxty. She got some big potatoes and grated them. Then she put them in a cloth(leanann ar an chéad leathanach eile)
