  1. In Ireland in olden the following kinds of bread was used. Boxty bread was made out of raw potatoes grated and steeped in water. The grating was usually done in the following way. A pint tin was got and there was about a dozen holes punched in the bottom of it. These holes were punched from the inside out so that when a potato when rubbed against its uneven bottom formed a pulp. When this was steeped for the usual time the top portion which was clear was drained off for use as starch. The bottom portion which the potatoes formed was mixed with oat meal until it formed a dough. This was then cut into farrels and these were on the tongs before the fire where they were cooked. This was called making a "scauwdow". Potatoes were also made into bread in this way. The potatoes were boiled and then peeled. When these
