    So that it makes a lovely, delicious meal.
    Boxty is made as follows.
    First the skin is peeled of the potatoes, and the potatoes are put into a basin, and grated. Then there is a pinch of salt and a cupful of new milk put into the basin. This is all mixed together like a cake. This boxy, as it is called, is either boiled or baked on the pan. It is also a wholesome and a very nourishing food. When the people had not much milk, they made what was called "sowins". This is made by steeping the seeds of the oats in a tub or crockful of water, and leaving them steeping there for three days. They people long ago used to boil the "sowins" in a little narrow vessel on the fire. When it was boiled it became very thick, and the people called this flummery. The people liked this food the best of all, although it tasted a little sour. But even so it was a very wholesome food.
