    The Making of Scratch
    2-3-'38.
    The poor people made "scratch", about sixty years ago.It is made as follows.:-The potatoes were washed, peeled,and the eyes, and all specks removed.Each potato was grated with a grater.The grater was a piece of tin got from an old tin.It was holed with a big nail.It was nailed in a semi-circular position,with the rough side out ;on a flat piece of board,for a handle.Each potato was rubbed up and down on the rough side of the grater.The "scratch" was grated into a clean pan .Then the "scratch" was spread out on a clean piece of canvas or muslin cloth and squeezed to take of the water and scratch was left slightly moised ,and a little flour and salt ,mixed with it to bind it .It was cut and into fancy shapes ,squares and diamonds and when it was brown ,it was eaten with butter.The poor people used to make it in the night and eat it, for their breakfast.
