When the churning is in progress for a considerable time. Boiling water is poured in to "break" the top of the milk. To know when the churning is finished the staff is clear of small pieces of butter.
When the churning is finished the butter is lifted off the milk with a strainer and it is put on a dish and salted and washed. The it is made into prints and used for the house, and if it is for sale it is made into rolls.
Long ago before creameries were invented the butter was put into wooden vessels called "firkins".(leanann ar an chéad leathanach eile)- Bailitheoir
