Boxty is made by grating new potatoes and mixing them with flour. It is then fried on the pan.
In olden times bread was not baked every day - a supply for a week was baked on a special day.
A cross is generally cut on the top of the cake, to allow the gas, which is in the soda to escape. If this were not done the sides of the cake would be broken.
