When they are dug they are put in heaps in the field. These heaps are covered with a coating of rushes on top of which is put a deep coating of clay to protect the potatoes during the winter from frost and wet. These heaps are called potato pits. Farmers on smaller holdings who only plant a small quantity of potatoes dig them with a spade.
The following are the names of the potatoes grown in this district - Epicures, Flounders, Arran
Banners, Kerr's Pinks, Arran Victors, Arran councls, Queens and King Edwards. Those that grow best in this district are Kerr's Pinks, and Arran Banners.
