    Staimpi.
    This was a cake made from boiled potatoes seasoned with salt and pepper and onions and butter. The cake was made in the usual way and baked in a bastible.
    It was a custom amongst the young to go from house to house before Easter collecting eggs. The carried a long stocking for to bring home the treasure.
    Owing to the hard Lenten fast there was an enormous amount of eggs consumed on Easter morn.
    Men women and children consumed any umber from 1 to 30 of them.
    During the day inquiries were made, "How many eggs did you eat to-day? would be asked, and the man or boy that could mention a large number was considered a great fellow.
    Sausages.
    Home-made Sausages were often made in the farmers' houses as follows.
    The intestines, (guts) of the pig were taken to the river turned and washed twice or three times
    The spare meat of the pig and liver were chopped finely in a keeler, salt, spices and pepper was added.
    The gut to be used weas first turned inside out
