  1. Long ago the people used not eat much bread. They used to eat potatoes and oatmeal. They used not use much flour at all. They used to eat potato cake, oaten bread, and boxty. When making potato cake the potatoes are boiled first. Next they are peeled and cut up in a basin. Salt is put in them and a small grain of flour and milk It is bruised well and rounded like a cake. Next a sheet of paper is spread on the table and the potato cake flattened on it.
