  1. Boxty-
    Raw potatoes were grated and squeezed in a cloth until dry. This was then mixed with boiled mashed potatoes & flour, flattened out to form a cake & baked on a grid iron or flat pan, without a lid. The cake was turned over to bake the other side.
    A starchy sediment [?] at the bottom of the water which was taken off the grated potatoes. This was used to starch linen collars & shirt fronts.
    Starch for laundry was made every week from grated potatoes. The grated potatoes were squeezed as for Boxty. The part nearest the cloth was take and again squeezed & then put into clean water & allowed to settle. This water was then squeezed through a very fine linen & pure white starch was made.
    District- Carrane and Carrowreagh, Tobercurry, Co. Sligo.
    Margaret Cully (75) related the method of starch making.
    She often made it for her mother.
    I have seen Boxty being made about 30 years ago in the above way. Later I have seen it made without the boiled potatoes; a little of the water was drained off the raw grated potatoes, & fresh milk replaced it. Very little flour was added + the batter baked in butter like pan-cakes are done.
