    churning by hand. There is a churn dash which is put into the churn + the stuff comes up through a hole in the lid. This is pounded up + down in the milk + turns the cream into butter. When a stranger comes in he takes a turn at the churning and says "Good luck to the cows." This is done for fear he would take the butter with him. The very old people used to keep a horse shoe under the churn for luck.
    When the butter is made it comes up in little balls on the top of the lid. Water is never poured in during the process or the butter would be scalded. The milk is heated before the churning starts. When the butter starts to come on the milk they say it is broken.
