should be big enough not to run through. The butter is well squeezed in the water with two "pattees" to squeeze and wash out the milk. It is them lifted out on a wooden trencher and a handful of salt to each cow is added. Then it is shaped into prints with the patties.
The buttermilk is now used for feeding calves. Whey made from equal quantities fresh milk and buttermilk heated to boiling point and the curd removed was given to people who were vomiting. If an evil eye takes the butter off the churn a red-haired man was got to take a brash to restore it. When a person comes in when churning they take a brash to leave the weight of themselves of butter on the churn.
