    dried and stored. In those olden days each home ground its own flour, by means of a quern, a rough hand mill for crushing the seed.
    This milling was done once a week. In this district of Feenagh the baking was done also once a week. Soda and skim or sour milk were used in the making of the dough, this was baked on large flat pans resting on a gridiron and laid on the open hearth fire. This bread made from home made flour was very nutritious it was called "one way" or brown flour. The first large grinding mill to manufacture flour in this district was built on the River Deel near Drumcollogher.
