- (continued from previous page)In a dash churn the dash is moved up and down until the butter is on the churn and then a rolling motion is used to gather it. To know if the butter is made a spoonful of milk is gathered at the dash but in the overend churn the valve glass becomes clear when the churn is done.
Water is poured in to bring the milk to the right temperature and a thermometer is used to see that it is at the right temperature. In the summer cold water is added to lower the temperature and hot water is added to raise the temperature in winter. In our churn there is a hole to let out the milk, then water is poured in and the butter is wash in the churn then it is taken out and salted and then it is made into pounds. The Late Robert Graham Ballinode churned for three days and could not get the butter(continues on next page)- Collector
