    According to the supply of milk in winter, the butter is made. In summer butter is made every day. The churning takes an hour.
    When the milk breaks, it gathers the butter into little lumps, and the milk is churned then.
    Boiling water is put in then to bring the milk to a temperature to make it break. When the milk is churned it is rocked to gather the butter, you have your butter dish ready then, and spring water in it, and put the butter into it. Get your spades then, and the work the buttermilk out of the butter, when that is done the water is drained off, salt is put on then, and more spring water. and mix the salt and the butter in the water, then the butter is made up into small and big rolls.
