- Flummery was very much used in olden times but it is not used now. The oats was ground in a quern at that time. The hull was not removed so the oatmeal could not be boiled for porridge.
Flummery was made by steeping the crushed oats to soak in "soft" water. It was left to stand for a week. Then it was put through a strainer and boiled until thick. It was ready for eating and was a very appetising meal eaten with milk or butter.- Bailitheoir
