  1. Since Sir Walter Raleigh introduced the potato at Youghal it has become one of the chief crops of he Irish farmer and the commonest food. Each farmer in this district sows from an acre upwards each year.
    Preparations for the sowing of the crop begins in February when the land is tilled. Ridges or drills are made with an iron plough. As each man owns only one horse they go encoe with a neighbour. One man leads the horses and the other steers the plough.
    While this is going on the women of the house are "slitting" the potatoes. That is taking
