  1. Churning
    We have a churn at home and it is an "end over end" churn. It is two feet high and it is four and a half feet in circumference at the top and bottom and is five feet round in the middle. It is twenty years in use. The various parts of the churn are the stand, barrel, lid, handle, plug valve and glass. The only marks on the churn are the maker's name and a number.
    Butter is made twice a week. It is the girl who does the churning. The dairy is in the basement and no strangers come down to it. The churning takes about fifteen minutes. The handle is turned by hand and the churn is revolving all the time. There is a little oval shaped glass on the lid of the churn and when this is clear we know when the churning is done.
    Water need never be put into the churning if the cream is at the right
