    the churn they would say "He took the butter away with him". Scarcely anyone believes this but they say it. It takes about an hour to churn. We do the churning by the hand.
    Some churn - dashes an worked by moving the dash upwards and downwards but others are worked by twisting the handle round about. We work our churn in the latter way. The "Burrel Churn" is worked upwards and downwards. It is a rare thing to see one of these churns now. Everyone has either an "American Churn" or a "Head over Heels" churn. In the latter there is a little bit of glass in the lid and people know by looking at this when the butter is made. If the butter is slow about coming on the cream, people add a little lukewarm water, but when it is too warm and doing too well people pour in a
