- (continued from previous page)are put on top of the potatoes and then clay is put on top of the rushes.
The potatoes that grow at Malin Head are: Kerrs Pinks, Arran Banners, Arran Victory's, Beauties, Up-to-Dates, Champions, Arran Councils, Arran Cresses. - We have a churn at home. It is three feet high and two feet wide at the top and two and a half feet at the bottom. The sides are round like a tub or barrel and it holds about sixteen gallon. The churn is made up of the staves, the hoops, the lid, and bottom.
We make butter three times a week in Summer and once a week in Winter generally. The churning is done with what we call a churn staff.
Sometimes strangers or neighbours coming into a house during the time the people are churning say may I not blink the milk or may you have plenty and then catch the churn staff.
Churning is done mostly by hand in Malin Head. A bad churner keeps the lid on and always keeps the staff moving up and down but a get churner keeps it on and also keeps the staff going round and round.- Collector
