    in the garden and covered with earth hay and straw, and they are left about six months in the ground.
    The potatoes used in this district are Leaguers and Epicures(Early Potatoes) Aran Banners, Aran Victors, Flounders, and Kerrs Pink.
    Kerrs Pink are considered the best and are the greatest favourite.
    Starch was made from potatoes and was thought excellent starch. The potatoes were grated very finely and the water was boiled till it thickened and was used as starch.
