There are lots of names of potatoes such as British Queens, Shamrocks, Arran Banners, Arran Chiefs, Presidents, Kerrs Pinks, Up To Dates, Colleens, Primroses, Champions, Suttons Abundance, Sky Blues, Irish Queens, and Beauties of Bute.
The Champions, Kerrs Pinks, Shamrocks and British Queens are the best types of potatoes that grow in this district.
Long ago potatoes were used instead of starch and they are used still my mother said she often used them.
The way to make it is grate the potato with a grater and pour boiling water on it and stir it till it gets thick and turns a bluish colour and when that is done it is the very same as with starch made with the starch out of the shop.- Bailitheoir
