Grown until about 1920 was used by poorer people as starch. They were first peeled and grated & boilig water added.
Potato-cakes are made in nearly every home during the autumn when the potatoes are now. For Hallow-Eve 'boxty cakes are made - potatoes being the chief ingredient.Treatment of Potatoes during Summer Months:
When the new potato-plants appear above the ground they are moulded with a plough - new clay is put around the stalks. If weeds appear they are wed by labourers. During the month of July they are sprayed with a mixture of blue-stone and washing soda. Early potatoes are dug about the 2nd week of July and other kinds during the month of October. They are stored in pits in the haggard and are covered with clay.
