  1. Oaten meal bread - made from oat meat (ground fine) a pinch of salt & water: baked on a griddle.
Leaven bread made from wheat-meal, and water, and also a leaven which has been kept from the previous cake.
This leaven is mixed with sufficient wheatmeal to make the required cake; it is mixed with very hot water; this is left in a warm place for 1½ to 2 hrs until sufficiently "risin". A little salt is then added & it is then properly shaped and put into the oven.
Leaven breaed is used by a good number of families at the present day.
Pan-cakes used on Shrove Tuesday are generally baked on a fire made of the holly & ivy put up for the Xmas decorations.
