- Long ago, in the Parish of Ahamlish Barony of Carbury, Co Sligo, the people made starch in their own home for the use of the household.
They got potatoes and cleaned them well. Then they grated them, put them in a piece of cloth, and squeezed the liquid out of them, and then poured it into a suitable vessel.
The solid part was given to cattle as food, and the liquid was allowed to settle.
The water was poured off and the sediment that remained was the actual starch.
All that was necessary to prepare it for use was to pour sufficient boiling water on it and keep it well stirred while doing so.- Bailitheoir
