  1. Mrs Mary Anne O'Rourke of Crickeen, Carrigallen who is now 84 years of age gave me an account of the class of tea used in her young days.
In Summer time when the hay was cut she picked out leaves like the clover plant and put them into a canister and placed them over the fire to dry.
When dry she cut them up into very fine pieces, with this stuff she made tea for herself and her family.
This she said was taken along with a cake of oaten bread.
In those days oaten bread was made by mixing a couple of handfuls of oatmeal with some hot water, salt and flour. When this was mixed it was baked before the fire, on a bread iron.
Oaten bread is made in several country houses yet.
