- Among the wealthy classes wheaten bread has been used for hundreds of years. Even among the poorer classes especially small farmers wheaten bread formed a large portion of their food. Proof of this is seen in the unearthing of many "querns" or hand mills which are dug up yearly in the bogs.
A quern consists of two grinding stones, one fitting into the other and the wheat was crushed in between them by turning the top one around.
