    Churning is done by hand: the dash moves upwards and downwards. The butter is made when it goes into big lumps. Boiling water is poured in before the churning is quite finished. The butter is taken off the milk and made into pounds and half-pounds. The milk is used for making bread: some of it is given to calves and pigs. When the milk is very plentiful it is sold in the town.
