    The churn used in Ireland up to recent years was the dash churn & it is still much used in many places.
    The churn which we use is 3' high & 1 1/2' wide. It is worked by a dash which is held in a pole, which can be worked up & down. It has a round body bound together with hoops. We churn about twice or three times a week in the Winter & every day in Summer. A quantity of hot water (more in Winter than in Summer) is added to make the work easier. If too much water is added the butter is very pale.
    The butter is made when the handle of the dash comes up clear. It takes about an hour & a half to churn in
