    BLOOD PUDDINGS are still made here. The intestines of the pig are thoroughly washed and cleansed with salt at the river, or in a large tub of water.
    Then the blood is mixed with oatmeal, pepper, salt, allspice and chopped onions. Pork finely chopped is also added.
    Before being filled, the intestines are cut certain lengths, about 12 to 15 inches long. The mixture is then put into them, and both ends are tied together. They are then put into a large pot of boiling water, suspended from a stick laid across the top of the pot.
