  1. There are very few thatched houses in this district now.
    The thatching is done in beds about eighteen inches wide until they get over the house.
    The straw is put on with the heads in and the roots out, and it is tied down with rods commonly called scallops.
    When a roof is thatched properly with flax, it would last about twenty years. The flax is put on with the roots in and the heads out.
    There are three kinds of straw, oaten straw, wheaten straw and flax straw that can be used for thatching
    Bacon Curing
    Bacon curing is still carried on in this district Long ago people used to cure all their own bacon, but now only a few people do it.
    When the pigs are killed, they are rubbed with salt, salt petre and spice.
    Then they are cut up, and put into boxes and weights put on top of that.
    At the end of eight days, it is taken out and fresh salt put on, and then put back in the boxes again, and left from three weeks
