- Blood puddings were made from the blood of animals and birds & often extracted from live ones. It was mixed with oaten meal, onions and salt and pressed into a cotton bag which was securely fastened at both ends and cooked in an ordinary pot with some water.
Long ago people when killing fowl, people used to let the blood drip into some vessel - where it froze or stiffened. Then it was put on the coals beside the fire and roasted and this was considered a very dainty dish - and very healthy. - Bailitheoir
