    When people were going to America they usually took a supply of oatcakes, with them as they kept fresh for a long time. When making potatoes cakes, they peeled some boiled potatoes, and mashed them, added a pinch of salt, and mixed with flour. They then rolled out the paste until it was thin, and baked it on a pan when they had it cut into small farls. When people were making boxty they got some raw potatoes, washed them and peeled them, and grated them. They then squeezed the water out of them and
