  1. Boxty
    The people used to make boxty out of big potatoes. They would get the potatoes and wash them and grate them and squeeze the water out of them. They would have some boiled potatoes too and mash them all in together. Some people would put flour through them and bake (in) it on the pan and more people would make dumplings of it and boil it.
