Butter is made twice a week in Summer and once in Winter. The woman of the house does the churning and if any stranger passing by comes in they are asked to help at the churning There was a superstition that they could take away the butter if they did not bear a hand. It takes much shorter time in the Summer than in the Winter. To churn the butter the dash must be worked up and down in the cream. When the handle of the dash is clear the butter is done.
