- (ar lean ón leathanach roimhe)It is done more times in summer because milk goes sour very quickly. Before the milk is churned it is put into a crock to get ready for churning. The churn has to be scalded before the milk is put into it. It takes half an hour to churn.
People put water into the churn when they are churning. If they put too much water in it will scald the butter & the butter will be white. The churning is finished when the dash comes up clean & all the butter is on the top of the churn.
Long ago there were no crocks. There were "cools" to gather the milk in, & instead of buckets they had "pigins". People used to make the butter with their hands.- Bailitheoir
