    They are covered with straw first over which is placed a thick layer of clay, to keep the potatoes safe from frost.
    The names of the potatoes grown locally in order of growth are, British Queens- Kerr's Pink- Shamrock- Aran Banner and Aran Chief.
    It is thought that the potatoes were used instead of starch years ago- but any old people questioned say they only heard their mother or grandmother told of it but neve saw potato starch themselves.
