The butter-milk is used for drinking by the men. It is also used for making cakes, but some people say sour milk is better.
Long ago people hadn't such good churns as they have now. One of the old churns was called the staff churn. It was long and narrow with a timber cover. A long piece of round timber would be sticking up through a hole in the cover. There would be a round piece also tied on to the staff, and you would keep pulling it up and down, beating the cream till the butter would be made. It was very slow work, as you would have it for nearly an hour, and sometimes for two hours.
