    This is the way to make dumplings, first get large potatoes and wash them well, then peel the shin off them and grate them and wring them in a cloth, then get boiled potatoes and mix them through the grated potatoes, and mix it all up with flour, and a small pinch of salt and soda, and make into small cakes and put them down in the pot to boil.
