  1. Churning was carried out and in many places is still carried on in a churn placed on the floor of the kitchen or dairy.

    The churn was a kind of barrel wider at the bottom than at the top and narrower nearer the top than at the top. The narrow part kept the lid from falling into the churn. There is a hole in the lid through which a dash for stirring the milk is worked up and down. The dash has an end like a cross working in the milk. There are holes in the ends of the cross to let the milk pass through. The dash is worked up and down at first but as butter begins
