    Butter is made about three times a week in the Summer, and once a week in the Winter. The women of the house generally do the churn-ing. If any stranger came during the operation, they would have to take a "brash.
    About twenty minutes after it starts a "brake" comes on the cream, this is a good sign that butter will appear soon. When the churning is done the butter is gathered into a heap in the churn. It is then taken off with a butter straner, and placed in a butter tub. There it is washed, salted, and mixed. When this is done it is
