    Then she turns the handle and the churn turns right over. This goes on for about one hour. She knows when it is done when the dots of the milk are gone off the glass in the centre of the lid.
    When it is hard churned, that is generally in cold weather, she pours boiling water in to it and it leaves it easy to churn. In the summer she does not put any water in it because the milk is hot enough.
    When it is churned, she lifts the butter out
